Introduction: Chicken Fajitas

Hello! Fajitas… a delicious, zingy, fresh dish. Yep, I accept! Fajitas are a Tex-Mex dish that were originally made from strips of meat from a beef skirt. This is why it’s called Fajita! Because it translates to “little strip”. They used to be cooked on a campfire or grill. Now they have lots of options! You can use any meat or go all vegetarian! This recipe has been in my family for a quite some time! All credit goes to my Dad!Whenever we go camping, we need to prepare foods! Well, this is the perfect food to prepare, seal up and take with for anywhere! It can also be put in a bag and frozen for future meals! You can have it in a bowl, or tortilla, it’s your choice! :) We love this recipe and can quite literally have it anywhere! So… let’s get started! Yes

Supplies

Tools:

  • A large skillet
  • Cutting board
  • Knife
  • Measuring supplies

For the chicken marinade:

  • 3 pounds chicken breasts
  • 3/4 cup fresh squeezed lime juice (around 7-8 limes)
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon of chili powder
  • 2 teaspoons cumin
  • 2 teaspoons oregano
  • 4 cloves of garlic (minced)
  • 1 teaspoon salt

For the mix:

  • 4-5 bell peppers
  • 2 large onions

Toppings and sides (optional):

  • Avocado
  • Rice
  • Beans
  • Shredded cheese
  • Cilantro
  • Salsa
  • Tomatoes
  • Tortillas
  • Sour cream
  • Guacamole

Step 1: Lime Peeling Great!

Take your limes and slice them in half. Juice them! I honestly think that limes are so sublime! They make you peel good! They’re juice right for a chicken marinade! :) Zest go to the next step!

Step 2: Nice As Spice!

Add your spices. The smoked paprika, chili powder, cumin, oregano, garlic, and salt. Hopefully it’s not chili hard to do this, I herb that it’s salt good though! Add olive oil and whisk together!

Step 3: It’s Chi-CKAN Not Chi-KCAN’T

Take your chicken and slice into 3-4 inch long strips. Or you can wing it, you don’t have to fry to make them impeckable! Eggscellent! Onto the next step! :)

Step 4: Mix of the Month!

Pour your spices over the chicken and combine well. Dun DUN DUN! The plot chickens!

Step 5: Not Cut Out for This…

Cut your bell peppers and onions! Cut the peppers by slicing around the top, cutting in half and taking out the seeds. Cut into strips. Cut the onion in wedges. This part is so great that it can bring tears to your eyes!

Step 6: Oily Pans!

Add a bit of oil to your skillet. Oil you need! Sauté the onion for a minute or two.

Step 7: Cooking Up A…fajita!

When your onions are translucent, add the pepper and chicken. Cook until most of the liquid has evaporated and the chicken has cooked. This varies but could take around 15 minutes.

Step 8: Assembling!

Take a tortilla or bowl and put however much you would like in! Add toppings! (Optional) if it’s in a tortilla, roll up and eat! We made rice and beans as a side so you can do anything with it! :)
