Hey momoluvers! It's momo and today I'll be showing you how to make a yummy 1 minute coffee cake! I know there are other cake in a mug recipes, but this one I found on a blog and it's healthier than most! Enjoy!

Step 1: Ingredients

For the batter:
1- 3 tbsp flour
2- 1/4 tsp baking powder
3- 1/16 tsp salt
4- 1 tbsp sugar
5- 1 tbsp and 2 tsp water
6- 2 tbsp butter [healthier alternative: applesauce]
7- 1/4 tsp vanilla extract

For the streusel:
1- 1/8 tsp cinnamon
2- 1 1/4 tsp brown sugar
3- 1/2 tsp butter [again, applesauce can be used]
4- tiny, tiny pinch of salt
5- 2 pecan [or walnut] halves

Step 2: Combine

Mix together the flour, baking powder, salt, and sugar.

Step 3: Add In

Add in the butter [or applesauce], water, and vanilla extract. Mix well.

Step 4: Streusel

In a small bowl, combine all streusel ingredients.

Step 5: Fill the Mug

Now grease a mug and fill it with batter about Half of the way full and sprinkle on 2/3 of the streusel. Now spoon the remaining batter on top. Finally, sprinkle on the rest of the streusel.

Step 6: Cook

Cook the coffee cake around a minute. If it is still wet, put back in for 10 seconds.

Step 7: Enjoy!
