Introduction: Frog Eye Fruit Salad

Frog Eye Fruit Salad fun fruit salad that is also known by the name: Acini de pepe Salad. It is a great cold salad that can be served at pot lucks, BBQ or just to have for a snack!

It is a delicious fruit salad and this recipe makes a pretty big batch. You can half everything if you want but the pasta just comes in 12 oz boxes so you would need to only cook half the pasta and store the other half. The initial mixture needs to cool in the fridge overnight, so plan to start this the day before you need it.

Step 1: Supplies

Ingredients

  • 1 12 ozpackage acini di pepe pasta
  • 1 cup sugar
  • ½ tsp. salt
  • 3 eggs, beaten
  • 2 tbsp. flour
  • 1 ¾ cup pineapple juice (you can buy this separate or try to get it from your cans of Pineapples)
  • 2 20 oz can pineapple
  • 2 15 oz can mandarin oranges
  • 1 bag miniature marshmallows
  • 1 8 oz. cool whip

Supplies

  • Pans for boiling pasta and cooking sauce
  • Bowl to store fruit salad, when you finally mix everything together, make sure you have a big bowl, because it makes a lot
  • Various spoons for mixing and stirring

Step 2: Initial Preparation

We are going to start by cooking the pasta and the sauce that needs to mix with it.

Boil the pasta according to the package.

In a sauce pan, combine sugar, salt, eggs, flour and pineapple juice (if taken from can of pineapples, store pineapple pieces in fridge until needed later). Cook over medium heat until thickened (when it sticks to the back of the spoon it should be thick enough). Stir continuously so it doesn't burn.

Once both are done, drain pasta and mix with sauce. Refrigerate this overnight.

Step 3: Mix-ins

Before you are ready to serve you can mix everything together.

Separate the fruit fro the juice. You will only need the fruit for the salad (except the pineapple juice for the sauce earlier). Mix together the pasta sauce mixture, cool whip, pineapples, mandarin oranges, and marshmallows.

That's it! Serve chilled and it should keep for at least a week in the fridge, but I'm sure you'll eat it all anyway.

Step 4: Serve and Enjoy

You can dye it different colors if you want :)
