Introduction: Mexican Style Appetizers From Boiled Eggs

About: I am married with two children. Spring, summer, and fall are my very favorite times of the year. I enjoy working in the yard, sewing, cooking, quilting, gardening, and creating. I do this to keep my sanity.

I was inspired to make this instructable because of the recent egg contest. I adapted this recipe from my son-in-law's dip recipe that he makes at least once a week. I wanted to post something for all of those who have left over Easter eggs. I made two different recipes at the same time using leftover Easter eggs. This method saves time and you will have two different kinds of appetizers to devour. I used a power drill to mix the ingredients to impress my husband. He had to mix it for me because the shaft was so long it was too hard to take pictures and mix at the same time. Lets get started.

Step 1: Ingredients and Supplies

Filling for deviled eggs and dip:

Ingredients:

1 Can Chicken Breast (drain juice)
6 Boiled eggs
1/8 to 1/4 Cup Hatch Jalapenos Diced ( add less or more if desired )
2-4 teaspoons or more Jalapeno juice from jar
1/2 Cup (finely) grated sharp Cheddar cheese
1/4 Cup or more Mayonnaise depending on taste
1 Fresh diced Jalapeno pepper deseeded I like to add fresh ingredients when I use canned products.
Paprika or salt to taste optional
Tortilla chips or crackers if using recipe for a dip.

Supplies:

Power drill or hand  mixer, paint stir attachment, cheese grater, measuring cups and spoons, bowls, mixing spoons, fork, knife, dish soap, lint free towel,  and serving dishes.

Step 2: Dice Peppers Grate Cheese and Shred Chicken

Method:

Dice and de-seed fresh Jalapeno

Dice canned Jalapeno

Using a fork shred chicken

Finely grate cheese

Step 3: Eggs

Method:

For deviled eggs:

Peel eggs
Slice 5 eggs lengthwise and remove yolks
Dice the remaining egg and set aside for the dip

Step 4: Combine Ingredients

Add ingredients to a bowl:


Cheese, egg yolks,chicken, Jalapenos, jalapeno juice, mayonnaise, and salt if desired.
Mix until incorporated using the drill and attachment, hand mixer or fork
Divide mixture in half

I reserved some of the fresh Jalapenos for garnish.

Step 5: Almost Done

Use half of the egg mixture to fill the eggs.
Fill the eggs, garnish with fresh Jalapenos, and season with paprika.

Add the chopped egg to the remaining egg mixture for the dip and if you have any filling left over from filling the eggs add it to this mixture.
Place a chip in the center and season with paprika and garnish with the diced jalapenos
Serve with crackers or chips.

Step 6: Sunshiine's Final Thoughts

This is a very tasty recipe. My husband likes the eggs made this way much better than the traditional deviled eggs. I like the idea of using up all the left over eggs and making two different appetizers.
