Introduction: Mini Mocha Cupcakes

Hey everyone it's momo! And today I have something special for y'all! These are VERY rich in flavor and not too overwhelming, enjoy!

Step 1: Ingredients

1- 2 tbsp instant espresso coffee powder
2- 6 tbsp butter
3- 3/8 cup superfine sugar (or just granulated)
4- 1 tbsp honey
5- 1 cup water
6- 1 and 5/8 cup of flour
7- 2 tbsp unsweetened cocoa
8- 1 tbsp milk and 2 tbsp cream
9- 1 tsp baking powder
10- 1 large egg
11- stuff to make your favorite kind of frosting. (I did a Greek yogurt one on the internet)

Step 2: In a Saucepan

Put the cocoa powder, butter, sugar, honey, and water in a saucepan and heat gently. (I put it on 3)

Step 3: Stir

Stir until sugar is dissolved. Then turn it up to 5 and melt the butter

Step 4: Pour

Pour your liquid mixture into a heatproof bowl and let it cool (only like 5 minutes)

Step 5: Sift

Then your going to sift in the flour and the cocoa together into the mixture. Then just mix it together well

Step 6: Milk and Baking Soda

Put in the baking soda and stir. Then put in the 2 tsp of cream/half and half then 1 tsp milk and mix well

Step 7: Beat That Baby

That's quite a violent title wow. Anyways put the egg in and wisk it into submission;)

Step 8: Cup Thingies

Put in cupcake liners (optional) and pour pour pour that all in. In the end you'll have about 44 cupcakes.

Step 9: Bake

To get to the sub-ending, lol you need to put the cupcake tray into the preheated oven at 350* and bake for 10-13 minutes.

Step 10: Icing

While that's baking, make your favorite icing (or use it store bought) as I said previously, I made a Greek yogurt one that's sweet but tart and it works extremely good with this recipe. And put it into a ziploc bag or pastry bag

Step 11: Complete the Look

Put the icing on the cupcakes and put into the fridge until your ready to serve!

Step 12: Enjoy!
