Introduction: Roast Chicken and Vegetable Pot Pie

Hello! Food... I love it. ESPECIALLY pie! There have been a couple times where my family has had a roast dinner with lots of leftovers! BUT... not quite enough for a whole meal. So, how did we fix this? Stuff it in a crust! And, it was delicious! That was how I came up with this recipe. You can use your leftovers for it, or you can do the roast for it!

Supplies

For the filling:

  • 3 parsnips
  • 3 large carrots
  • 6 Yukon gold potatoes
  • 1 1/2 pounds of chicken thighs
  • 1 cup peas (optional)
  • 2 cups gravy

OR

  • five cups of your leftovers cut up and combined with gravy.

For the crust:

  • 1 pinch of salt
  • 2 1/2 cups flour
  • 14 tablespoons room-temperature butter
  • 3/4 cups water
  • 1 egg

Step 1: I'm Peeling Good!

Take your parsnips, carrots and potatoes and peel them! Cut your parsnips in the middle down the length of it, cut the middle once widthwise. Cut the carrots once in the middle width. Cut the potatoes in half.

Step 2: Water You Talking About?

Boil some water in a large pot getting ready to put the vegetables in! Put the potatoes in for five minutes. Add the parsnips and potatoes for another five minutes. While it’s boiling…

Step 3: Butter Late Than Never!

Combine all of the dry ingredients. Slice the butter so that it will be easier to combine, I think there was a rumor about butter... but I'm not going to spread it! With your hands combine the butter into the mixture. Try rubbing your fingers together as if making a shortbread. When its about pea sized or crumbly you can stop mixing! I know these puns aren't worth melting for...

Step 4: I Knead to Make the Dough!

Pour in the water and combine. Squeeze the dough to see if it sticks together or not, if it doesn't it needs more water. Divide the dough in half and flatten into two hand-sized discs. Refrigerate for an hour. You might be thinking "water you talking about?!" In this time you can roast everything!

Step 5: Cluck on the Next Step!

If you are using chicken breasts or thighs, this is the step for you! Otherwise you can use a rotisserie chicken or turkey leftovers! Oil a large pan to put your chicken in. Remember, if you have any questions oil help you! Lay the chicken out on the pan and season with salt and pepper. Preheat the oven and set aside. I know I know, all these puns are fowl...

Step 6: Lets Starch on the Next Step!

When the time is up, drain your vegetables. With the same hot pot, melt 3 tablespoons of butter, 1 tablespoon of olive oil, 1/4 salt and pepper. Put the vegetables back in and the lid on the pot. Shake it up and combine so that the vegetables are covered in butter. Hmmmm... butter is technically lotion for food!

Step 7: Can I Fry to Stop These Pans?! (puns)

Spread the vegetables out on a cookie sheet. Place that and the chicken in the oven at 400 degrees Fahrenheit for 25 minutes. Take the vegetables out and move them around, put in the oven for another 25 minutes or until golden brown.

Step 8: I'm Not Cut Out for This!

Take the pie discs out of the fridge so that it goes to room temperature. In the meantime cut everything up! There is no particular way to do it, just cut everything up into bite-sized pieces. Mix it all together. About one to two inch chunks. If you are using peas, combine them in too. Pour in the gravy and combine. This is your filling! I have a large stock of puns...

Step 9: Just Roll With It!

Flour a large surface. Take one of the discs and roll out until it is about one inch bigger than the pie dish that you are using! You can measure by putting the pie dish on top of the dough. Then put the rolled out dough into the dish, pushing it to the sides so it is all equal. Roll out the other disk so that it is just big enough to cover the top of your pie! Set aside.

Step 10: Can I Have a Filling?

Take your filling and put it into the pie dish! If you are using leftovers take about four to five cups of it.

Step 11: Easy As Pie!

Take the dough that you set aside and put on top of the filling. Not all sides will be equal and that is okay! Take the edges and pinch them together, then crimp it! I did this by pinching my index and thumb together on the crust.

Step 12: May I Vent?

Put some vents in your pie! This is just to let the air out, plus it looks nice! You can do whatever pattern you want! Some simple lines, or something depending on the event. Such as a tree, sun, heart, spiral, anything you want! I did a heart :). Beat a whole egg and then use a brush to put it on the pie, you may not use the entire egg. This will make the crust beautiful and golden!

Step 13: Put It in the Oven Et Voilà !

Put it in the oven at 425 degrees Fahrenheit for 30 minutes or until golden. Thank you for looking at this recipe I hope that you like it! It is great for a delicious and quick comfort food. You can also prepare the crust earlier in the week and then use leftovers if you need an easy meal for the night! You will be occu-pied eating it! Enjoy and have a great rest of your day! :)
