Introduction: Spring Bunny Cake

This cake is too easy not to try yourself. Make it your center piece on an Easter dessert table or bring it to the next office party. Whatever the occasion this Spring, I can guarantee the compliments will be flowing.

You'll Need:

Frosting - White & Green

1 round layer of cake

Knife

Spatula

5 large marshmallows

Pink Sugar

Hot Water for dipping spatula in (optional)

Piping Bag

Small Star Tip

Wilton Tip #233

Step 1: Build the Bunny

Make sure the cake is fully cooled and has been refrigerated or frozen. This will help to prevent breakage as seen in the picture.

Start off by cutting the cake layer in half. Flip each piece over and spread frosting on both halves.

Sandwich the two pieces together making sure that the top of the cake is on the outside.

Step 2: Crumb Coat

After the pieces sandwiched together, set the cake on a cake board or plate with the cut half on the surface as seen in the picture. Coat the entire cake in a thin layer of frosting to trap crumbs. Allow to set in the freezer for 20 minutes.

Next, with a knife cut out a small notch towards the left side from the center. This will be the back of the bunny's head. See picture or video tutorial for the proper place to cut. Save the removed cake and spread a thin layer of frosting over the newly cut section. Freeze for 10 minutes.

Step 3: Fur

Fill the piping bag with white frosting and a star tip. Cover the bottom of the cake with small stars making sure not to leave any gaps. Do this by applying a small bit of pressure to the bag and pulling away quickly.

Once you've got 1 or 2 rows of frosting piped, roll a marshmallow to create a rounder shape and stick to the bag of the bunny using frosting as glue.

Step 4: Almost Done

Next, take the piece of cake that was removed from the layer and split the two halves so that there are two pieces. Place these (round side up) towards the front of the bottom below the cut out notch. Carefully frost the legs and continue to pipe stars all over the cake until you've covered he entire surface.

If needed fill in any gaps or see through spaces with more piped stars.

Step 5: Grass

Once the bunny is fully covered in delicious frosting fur, fill a piping bag with green frosting and use Wilton tip #233 or any other grass/fur piping tip. Pipe grass around the entire circumference of the cake.

Step 6: Marshmallow

Feet: Cut 4 marshmallow in half short ways and make two slices long ways making sure not to cut all the way through. Place two of the feet in front of the legs and two toward the back of the bunny.

Ears: Diagonally slice a marshmallow and dip into pink sugar. You can make your own pink sugar by adding a small drop of pink food color to granulated sugar. Place the ears in the crevice on top of the head.

Step 7: Finishing Features

Cut a black or blue jelly bean in half long ways and apply to the sides of the head. Push a pink jelly bean into the bottom of the face for the nose and finish with a few fresh flowers to dress it up.
