Introduction: Mandel Bread Passover Recipe

This is my moms amazing mandel bread recipe for Passover. It is kosher for Passover because it doesn't use any leavening agent.

Mandel bread is usually hard and crunchy. I prefer this recipe because the bread is moist. Don't let the word 'bread' fool you! It tastes just like a cookie!

Step 1: Ingredients

2 Cups sugar

2 sticks un-salted butter (1 cup of butter)

5 eggs

2 ¾ Cups of matzo cake meal

½ tsp salt

¾ Cup potato starch

1 large package choc chips

1 tsp. cinnamon + 3 tbsp. sugar - cinnamon/sugar topping

**pre-heat oven to 350 degrees

Step 2: Mixing Ingredients

  1. Cream sugar with the butter.
  2. Add eggs one at a time beating after each addition.
  3. Put cake meal, salt and potato starch together and mix then fold into egg mixture.
  4. Add chocolate chips and mix together.

Step 3: Prepping Loaf

Cut batter in half and put two loafs on greased cookie sheet. Batter will be sticky but wet hands to make it easier. Sprinkle loafs with cinnamon and sugar mixture.

Step 4: Last Steps

Bake at 350 degrees for about 30 minutes. Cut while loafs are still hot.
