Introduction: No Bake Biscoff Cheesecake Recipe

Delicious individual serving Biscoff desserts. This no bake shot glass serving layered desserts are creamy and smooth.


Supplies

Lotus Biscoff Biscuits – Makes the base for the no-bake Cheesecake and also for garnishing on top.

Melted Butter – Is used to make the base to stick together. Make sure to use unsalted butter.

Double Cream – Add extra creaminess to the final outcome.

Cream Cheese – You may substitute this with Vegan one and Philadelphia Vegan cream cheese is a great option for substitution.

Icing Sugar – Is the best option for using in the recipe as it melts much faster than granulated sugar. If you do not have store bought icing sugar to hand, just blend some granulated sugar really fine and it should be ok.

Lotus Biscoff Spread – This is the cookie butter that makes the whole dessert unique, creamy and delicious.

Step 1: Preparing the Biscuit Base

Crush up some Biscoff cookies using a food processor. Take 2 table spoons from that and set aside. On the rest, add melted butter and blend for few more seconds until they are like the texture of wet sand.


Place around a table spoon of cookie crumb-butter mixture on the serving glasses and press with spoon or something to level the base.

Step 2: Making the Cheesecake Mixture

In a bowl beat double cream until semi-stiff peaks form. It’s best to use cold cream from the fridge as they beat faster.


Now add Powder sugar, Cream cheese and Lotus biscoff spread and beat until smooth.


Pipe in creamy mixture up to almost to the top but leaving some space for the third layer and garnish.

Step 3: The Topping & Garnish

Melt some biscoff spread in the microwave (20-30 seconds) and put some on top of the creamy layer. 


Finally garnish with some crushed biscoff that you have set aside and then breaking lotus biscuits in halves and pressing them on each dessert glass.

Step 4: Chilling

Chill for few hours for the flavors to blend and get dense.
