Introduction: Cotton Candy Pizzelles (Italian Cookies)

About: I make cake for my friends and family occasionally as a hobby. I also enjoy crocheting.

My husband is part Italian . His mom always makes pizzelles with anise, So when we got married I asked his mom for her  recipe. Now that she lives in Missouri, she sometimes sends them for Christmas.  Since I don't like the taste of it, I usually make part of the batch with anise and part an other flavor.  So I have been experimenting with different flavors over the years.This is my most recent flavor creation ;) You can chose to put the chocolate on top if you want.

Step 1: You Will Need...

Ingredients:

12 eggs
2 cups of cotton candy sugar (I found it at smart and final)
1 cup of oil
1 stick of melted butter
2 tsp of baking powder
1/2 tsp of baking soda
6 cups of flour
1 tiny bottle of cotton candy flavoring

Pizzelle maker(Bed, Bath, and Beyond)
timer
cooling rack

Step 2:

Mix all of the ingredients in  the order that they are listed. Do not over mix.

Step 3:

Plug in and let your machine warm up(follow the instructions on your machine) My machine is made by Cuisinart. I find that the heat setting 3 works good. Some pizzelle makers make bigger cookies than others. I use a 1/2 tablespoon measuring spoon to spoon the dough into each side. Set  the timer for 1 min. Check your cookies and adjust time accordingly. Once they are done, set them on a cooling rack. Spray a light mist of water on all of the finished cookies, then sprinkle some cotton candy sugar on top and let stand for about 10 min.

Store in a airtight container. I don't know exactly how long the will last. They are usually gone before I have to worry about silly stuff like shelf life.  :)

Other serving suggestions:

*Drizzle some chocolate on top
*Eat as is without the sugar on top
*Directly out of the pizzelle maker you can shape them into a bowl for ice cream and other fun treats.
*You can also make them into sandwich cookies by filling them with whipped cream or anything you can think of.
