Introduction: Seven Layer Cookie Bars

When I was a kid my mom made Seven Layer Bars at least a couple times every year and over this holiday break I decided to make them for my kids. Seven Layer Bars are probably one of the most decadent treats out there and they're incredibly easy and fast to make. They're perfect for when you need to whip something up for a party in a hurry.

Let's get started!

Step 1: Ingredients

To make Seven Layer Bars you will need:

1 1/2 cups crushed graham cracker crumbs

1/2 cup butter (1 stick)

1 cup chocolate chips ( I like semi sweet but use whatever kind you like.)

1 cup butterscotch chips

1 cup sweetened flaked coconut

1/2 cup chopped nuts ( I like Almonds but Walnuts are a good choice too.)

1 (14 oz) can sweetened condensed milk

Step 2: Make the Graham Cracker Crust

To make the crust begin by melting the butter and combine it with the graham cracker crumbs in a small bowl and mix well. My local supermarket did not have graham cracker crumbs so I smashed regular graham crackers in a plastic bag until I had uniform crumbs.

Spray a baking pan (9 x 13 is an ideal size) with cooking spray and spread the mix into the pan until you have an even layer. I like to use a sheet of wax paper to press down the graham cracker crumb mix with my hand to compact it down a bit as this makes the crust more firm.

Step 3: Add Sweet Layers!

Now add the chocolate chips, followed by butterscotch chips and then the coconut.

Chop up the nuts and add them on top of the coconut.

Now pour the condensed milk over the top and spread with spatula to make sure it covers everything evenly.

You're probably thinking "Wait a minute, I only count six layers!"

I asked my mom the same question- the butter/graham cracker crust counts as two layers. :)

Step 4: Bake (and Wait!)

Place the baking pan in the oven and bake at 350 degrees for about 25 minutes or until the edges are golden brown.

Remove from the oven and let cool. Once the pan has cooled cut the bars and then set them in the refrigerator to chill them as they tend to be a bit more solidified and less gooey that way.
