Supplies

Ingredients:

  1. 1 14oz can of sweetened condensed milk (396g)
  2. 1/4 cup of unsalted butter (55g)
  3. 2 1/2 cups of butterscotch chips (450g)

Tools/Equipment:

  1. Microwave safe bowl
  2. 7x11-inch pan or 8x8 inch pan
  3. Parchment paper or wax paper
  4. Spatula

Step 1: Heat Condensed Milk and Butter

Add the sweetened condensed milk and the butter to a microwave-safe bowl. Then heat on high in the microwave for 2 1/2 to 3 1/2 minutes until the butter completely melts. It will get airy and bubbly while it heats up, that is normal. Stir it at the 1-minute mark.

OR

You can pour both ingredients into a medium pot, use medium heat, and heat it up on a burner if you do not want to use a microwave. Make sure to stir regularly until the butter melts and it gets a roiling bubble.

Step 2: Add Those Chips

Now remove the very hot milk from the microwave or the burner if using a pot on the stovetop and pour all butterscotch chips in it. Push them down with a spatula. Then wait for about 5 minutes.

Stir well until you have a nice thick butterscotch fudge.

Step 3: Chill That Fudge

Pour the fudge into a 7x11 or 8x8 inch pan lined with parchment paper or wax paper. Use a spatula to spread it out evenly if needed.

Place the fudge in the fridge and let it cool/set for 30 to 60 minutes or longer, sometimes it takes a few hours to set properly.

Step 4: Cut and Serve

Remove the cold fudge from the fridge and slice it into squares.

TIP: If your knife is sticky you can try spraying it or rubbing it with a little cooking oil or run it under hot water to heat the knife then wipe it off. The hot knife will cut through the fudge more easily. If the fudge is still fairly soft you can put it in the freezer for 15 to 30 minutes then try cutting it.

Enjoy!
