Introduction: Avocado Cucumber Tomato Salad Recipe With Feta

Today I want to show you how to step up your salad making game. I know, I know, salads are BORING and they lack flavor and interest, I totally get it however this salad is anything but boring. The flavors in this salad work well together, you can add more or less of any ingredients and really make this salad your own. Can we also just admire the color and different textures? You know this salad is not only pretty but tasty as well (anything with avocados and feta has my name all over it). Step 1: Ingredients

  • 2 avocados, diced
  • 1 English cucumber, diced
  • 2 lb. tomatoes, diced
  • ½ medium red onion, sliced thinly
  • 2 Tablespoons extra virgin olive oil (24 g)
  • Juice of 1 medium lemon
  • ¼ cup cilantro, chopped (10 g)
  • Feta Cheese (crumbled)
  • Salt and pepper to taste

Step 2: Dice Avocados

Start off by washing all your ingredients. Slice and peel off the skin of the avocados and add in diced avocados to a large bowl.

Step 3: Peel and Dice Cucumbers

Peel and diced cucumber. I peel mine into a patten for extra interest and kept the cucumbers diced pretty thickly. Add to the salad bowl.

Step 4: Dice Tomatoes

Diced tomatoes, and sliced onion. Add to the salad bowl. If you feel like this is too many tomatoes, add less and use your favorite types of tomatoes (home grown is always better).

Step 5: Add Olive Oil and Lemon Juice

Drizzle salad with extra virgin olive oil and the juice of one whole lemon (or more). I alternated my ingredients but you can add them to the bowl in which ever order you like.

Step 6: Add Cilantro and Feta

Add chopped cilantro. Top with crumbled feta cheese and add salt and pepper to taste.

Step 7: Enjoy

Toss everything gentle together. Enjoy!

Once you have added the olive oil, lemon juice and salt and pepper serve it up because as the salad sits it will release juices.
