Introduction: BLUEBERRY MUFFIN WITH LEMON GLAZE | MUFFIN TIN
I'm super happy to share this recipe here at right time.Two days back i was just surfing instructables and when i look into the contest and there i found organic contest.I was pretty sure to enter into the contest and slowly i started thinking what kind of recipe can i try that too important thing is its completely organic.My neighbor is so close to me she is Finnish and she had her own farm i was discussing about the contest she gave me some good idea regarding organic contest and luckily she had already picked some blueberries at her farm and she kept in a fridge so she gave me that to do some muffins.Here is the story begins of my BLUEBERRY MUFFIN WITH LEMON GLAZE.
Step 1: Ingredients:
FOR MUFFIN
1. Organic blueberry
2. Egg
3. castor Sugar
4. Sour cream
5. Vannila essecnce
6. Rape seed oil
7. All purpose flour
8. Baking powder
9. Salt
10. Lemon juice
11. Lemon zest
FOR LEMON GLAZE
1. Powdered sugar
2. Lemon juice
3. Lemon zest
Step 2: Making of Wet Ingredients:
1. Take a wide bowl,
2. Add 2 large room temperature egg,and 1 cup of castor sugar
3. Take a electric hand mixer,beat it with high speed for 2 to 3 minutes or until the eggs colors looks pale or in light yellowish color
4. Now add 1 cup of sour cream and 1/2 cup of oil (rapeseed oil or vegetable oil)
5. Again mix them well using hand mixer until it well combined
6. Now the wet ingredients are ready.
Step 3: Making of Dry Ingredients:
1. Take a bowl,add 2 cups of plain flour
2. Add two tsp of baking powder
3. And a pinch of salt
4. Mix it all together
5. Now the dry ingredients is ready
Step 4: Making of Muffin Batter:
1. Add dry ingredients to the egg and sour cream mixture
2. Mix well with hand mixture and make sure there is no lumps
3. Add 1 tsp of freshly grated lemon zest
4. Add 2 tsp of lemon juice
5. Now its time to add the hero of the recipe,add 1 cup of fresh organic blueberries
6. Give them a nice mix all together using spatula
7. Now the muffin mixture is ready
Step 5: Organizing Muffin Tray:
1. Here i have chosen two methods. One is small muffin mold and the other one is use and through aluminium muffin cup
2. Firstly place the baking paper into the mould
3. Fill the muffin batter to all the cups
4. Now its ready to bake
Step 6: Ready to Bake!
1. Preheat the oven at 400F for about 10 mins
2. After 10 mins place the muffin mould in the oven rack and close it tightly
3. Let it allow to bake it for about 20 mins at 400F
Step 7: Making of Lemon Glaze:
1. Take a bowl,add 1 cup of powdered sugar
2. Add 2 tsp of freshly grated lemon zest
3. Add 2 tsp of fresh lemon juice
4. Now mix it with spoon,if you preferring more watery add some more tsp of lemon juice or if you think its too watery then add some powdered sugar
5. Lemon glaze is ready

Step 9: Blueberry Muffin With Lemon Glaze!
1. After 20 mins take the muffin mold out from the oven
2. Yummy blueberry muffins is ready and its so so soft and fluffy
3. With the help of spoon add some lemon glaze at top of the muffins
