Introduction: Bird Nest Cupcakes

About: I have been sewing and crafting for several years, my children are grown so now I have lots of time to be creative. I enjoy photography, cooking, cake decorating, painting and sharing my projects with others.
Spring is officially here so I made these cute cupcakes to celebrate! I made 12 jumbo cupcakes, but you can make 24 regular size if that's what you prefer.

Step 1: Ingredients and Supplies Needed

Cake mix, (any flavor) 1 can frosting (or make your own) 1 package Robin Egg candy, 1 package butterscotch chips, 1 can (5 ounces) Chow Mein noodles, cupcake papers, 3 eggs, 1/4 cup vegetable oil, Mixer, cupcake pan.

Step 2: Mix the Cake Batter

Blend the cake mix with the eggs, oil and water according to the package directions.

Step 3: Bake Cupcakes

Place the cupcake papers in the cupcake pan and fill 3/4 full. put the pan in a pre-heated 350 degree oven for 22 minutes for the jumbo cupcakes and 18 minutes for regular size cupcakes.

Step 4: Making the Bird Nests

Since I don't have a double boiler, I placed a medium size pan inside a larger pan. I put about 3 cups of water into the larger pan. turn the heat on medium and place the butterscotch chips into the smaller pan. when the water begins to boil, turn the heat down to low. Stir chips until they melt. open the chow mein noodles and stir them into the butterscotch chips until coated. Place wax paper on the counter and drop the mixture by spoonfuls onto the wax paper. using the back of the spoon, press down in the center of the "Nest" making room for the eggs. Place 3 robin eggs on each nest. Let these set for about 30 minutes.

Step 5: Frosting the Cupcakes

After the cupcakes have cooled for at least 30 minutes, frost with store bought frosting or make your own. I place the frosting in a gallon size freezer bag and cut the corner off. Then it's easy to sqeeze it out onto the cupcake and throw away the bag when I'm done!

Step 6: Place Bird Nests on Cupcakes

Gently place each nest onto a cupcake, pressing into the frosting. I think these turned out really cute!
