A deliciously different way to eat chicken goujons! Our chicken goujon wraps are made with fresh chicken breasts sliced into goujons and coated in Italian herb breadcrumbs then oven baked till crisp. The chicken goujons are enclosed in a soft warm wrap with sweet herby roast tomatoes, lettuce and fresh sliced avocado all topped with a homemade savoury parmesan and garlic mayo.

1 Garlic crusher
1 small bowl

1 grater

1 chopping board

1 large knife

2 baking tray

1 fish slice

1 shallow bowl

1 pastry brush

2 plate

Wrap Ingredients

200 grams cherry tomatoes
4 tbsp olive oil

2 tsp Italian herbs

2 avocado

80 grams bread crumbs

1 egg

320 grams mini chicken fillets

45 grams plain flour

10 grams Salad leaves

4 wraps

salt and pepper to taste

Dressing Ingredients

1 cloves garlic

2.5 tbsp mayonnaise light

15 grams parmesan or pecorino cheese

30 ml water

1 tsp white wine vinegar


Step 1: Make the Dressing

To make the dressing

peel and crush the garlic using the garlic crusher or chop finely

add the mayonnaise to the bowl

add the water, vinegar and garlic to the bowl and mix

finely grate the parmesan add to the bowl mix together

season with salt and pepper cover and place in the fridge.

Step 2: Prep the Coating for the Goujons

set the oven to 190C 375F or gas mark 5

place the breadcrumbs on a plate with the 1/2 the Italian herbs and mix

break the egg(s) into the shallow bowl and beat with a fork season with salt and pepper

place the flour on a plate

organise the breading ingredients into a row with the flour first , then the egg and finally the breadcrumbs.

lightly coat the baking tray with oil using a pastry brush

Step 3: Coat the Chicken Goujons

slice the chicken fillets into small strips or goujons

take the chicken strips or goujons and dip into the flour

From the flour dip the chicken into the egg fully coating it.

Then place into the breadcrumbs and coat in breadcrumbs

place the crumbed chicken onto the oiled baking tray

dab the breaded chicken with a little of the oil using a pastry brush

repeat for each chicken strip.

place in the oven bake for 15 minutes turning once part way through cooking

Step 4: Roast the Tomatoes

wash the cherry tomatoes

place the tomatoes on the baking tray with a tsp of oil

sprinkle the remaining Italian herbs over the top, bake for 8 to 10 mins

Step 5: Prepare Wrap Ingredients

5 minutes before the chicken goujons are cooked

Cover the wraps in foil and place in the oven for 5 mins till warm or microwave the wraps for 30 seconds

cut the avocado(s) in half remove the stone and skin, slice lengthways into thin slices

remove the tomatoes from the oven

Step 6: Build the Wrap

remove chicken from the oven

place salad leaves in the middle of the wrap

add 4 slices of avocado to the wrap

add about 5 tomatoes to the wrap

place 2 goujons into the wrap

top with the parmesan mayo

roll the wrap, serve with salad or sweet potato chips
