Introduction: Chicken in Pancetta
I invented this on a self-catering holiday, wanting something tasty, easy, and not requiring many ingredients. Since then it has become a favourite meal, easy to make for any number from one person to a whole crowd.

Step 1: Ingredients
For each person:
1chicken breast
3 thin slices pancetta (or bacon)
25 g cream cheese with garlic and herbs
Black pepper

Step 2: Stuff the Chicken Breasts
Use a sharp knife to cut a deep pocket in each chicken breast. Fill with the cream cheese. Fold the chicken to enclose the filling. Season with pepper. Wrap in pancetta.
Step 3: Bake the Chicken
Place chicken on a baking tray lined with oiled foil. Bake at 190 deg/170 deg fan/ gas mark 5 for 20 - 30 minutes until cooked through and browned. Serve with roasted vegetables and garlic bread.
