Introduction: Christmas Cranberry Orange Glaze Muffins
Christmas is right around the corner and I could not be more thrilled! This time of the year it is easy to get caught up in over spending on presents and decking your house out for the holidays or if your like me over indulging in treats because it is the perfect time to bake. But in all honesty I've been wanting cranberry muffins for a long time now and I have not been able to get my hands on any cranberries so as soon as I saw them in storeI bought a bunch.... These muffins are perfect for this time of the year and in all honesty anytime of the year with a nice big cup of coffee or tea. They taste better the next day and I could not be more excited on how they turned out. The orange glaze on top is so good, the muffins have the perfect amount of sweetness to tartness. Step 1: Ingredients and Tools
Cranberry Orange Muffins
- 2 ½ cups all-purpose Flour
- 4 teaspoons Baking Powder
- 1/2 teaspoons Salt
- ½ cup Coconut Oil (melted)
- 1 cup Sugar 2 Eggs (room temp)
- ½ cup Milk (room temp)
- ¼ cup orange juice Zest of one Orange
- 1 teaspoon Vanilla Extract
- 1 ½ cup fresh Cranberries
Orange Glaze
- 1 cup powdered Sugar
- 3 Tablespoons orange juice

Step 2: Dry Ingredients
Begin by preheat your oven to 425 degrees F. Then line the muffin tin with paper liners
In a large bowl add flour, baking powder and salt and whisk till combined.
Step 3: Wet Ingredients
In a medium bowl, add melted coconut oil, sugar, eggs, milk, orange juice, orange zest and vanilla and whisk until everything is combined.
Step 4: Combine Wet and Dry Ingredients
Add the wet ingredients to the dry ingredients and fold until it is combined.
Step 5: Add Cranberries!
Gently fold in the cranberries. You do not want to mix them hard because the cranberries are already soft and can burst, so be gentle!
Step 6:
Divide the batter between the lined muffin tin. To make the muffins even prettier, add extra cranberries to the top (you can skip this part if you prefer).
Step 7: Bake!
Bake at 425F degrees for 5 minutes, then reduce the oven temp to 375F degree and bake for another 13-15 minutes.
Step 8: Make the Glaze!
While the muffins bake, prepare the graze. In a small bowl add the powdered sugar and one tablespoon at a time of orange juice and whisk until the glaze is a bit runny or to the consistency you desire. Avoid adding all of the orange juice at one time, it will be hard to incorporate.
Step 9: Remove and Cool
Remove the muffins from the oven and allow them to cool before glazing.
Step 10: Glaze
Once cooled, top the muffins with the orange glaze. I used a spoon but pretty much any utensil would do the job here. You can also remove the muffins from the muffin tin to do this but it might just add an extra dish to wash afterwards.
Step 11: Enjoy!
Allow the muffins to cool completely (if you haven't) and then enjoy them! I actually think the taste is better the next day after they have settled. Enjoy this muffin in the morning with a nice cup of coffee or tea and it will add the perfect balance of tartiness and sweetness to your breakfast.
