Introduction: Copy Cat Panda Express Orange Chicken
Ding! The lunch bell rings and you head to your usual table in the cafeteria. You usher your friend over to your table and he walks over, holding his cafeteria tray like it is a giant slug. But first, he pauses by the trash can and turns his tray upside down to dump it out. The mac n cheese (if that's what it actually was) sticks to the tray, seemingly defying gravity. He slams the tray against the side of the trash can without any luck. Finally, he gives up and tosses the entire tray into the trash can. You snicker as he walks over and you pull out your lunch: Homemade Panda Express Orange Chicken! Your friend stares and his jaw hits the ground. You hand him a piece of chicken and he devours it without even looking. Before you know it, a line forms behind him. "$0.50 a piece," you announce. You go home rich...and hungry.
Step 1: Ingredients
1 lb chicken breast or thigh (no bones or skin)
2 tbsp oil
1 tsp minced garlic
1 1/2 cup corn starch
2-3 green onion chopped
1⁄4 cup water
2 tsp oil
1 1⁄2 tbsp soy sauce
2 eggs
5 tbsp sugar (3 tbs sugar 2 tbs brown sugar
4 tbsp rice vinegar
2 tsp honey
More oil for frying
2 tbs sesame seeds (optional, but they make it look authentic)
1 orange, for juicing
1 more tbs of cornstarch
1 1/3 tbs water
1 tsp salt
1 tbsp ginger powder (or even better, fresh ginger)
3/4 tsp garlic power
1/3 (or however spicy you want it) chili powder
2 tsp of onion powder
Step 2: Cut the Chicken
Cut you chicken into bite size pieces. Set aside for coating.
Step 3: Coat Your Chicken
Whisk in a bowl, the eggs, salt, 2 tablespoon oil, onion powder, and garlic powder.
In another bowl, mix together 1/2 cup flour and 1 cup corn starch.
Coat the chicken pieces in the dry mixture, then the egg mixture, and then back into the dry mixture. Set aside for frying. This method, the double dipped chicken, makes it so much more crispy!
Step 4: Fry Your Chicken
Fry your chicken on high heat or until golden brown. While your chicken is frying, make the sauce.
Step 5: Make the Orange Sauce Goodness!
Mix together soy sauce, sugar, rice vinegar, 3/4 cup orange juice, fresh garlic, chili powder, ginger powder, and honey.
In a separate bowl, mix together 1 1/3 tbs of water and the cornstarch (the save for later cornstarch).
Step 6: Mix It All Together and Devour!
In a large frying pan, mix the chicken, orange sauce, and green onions. Mix together well. Add in the water and cornstarch mixture. This will thicken the sauce and make it stick to the chicken. Stir for about 5 minutes or until sauce has thickened. If it isn't thickening, add more cornstarch to the pan. Transfer to a Pyrex and sprinkle with sesame seeds! Yum! Serve it over rice if you want, then...DEVOUR!!!!
