Introduction: Gluten Free Ginger Bread Cookies
What is a better way to kick off the Christmas season then with the delightful smell of gingerbread cookies drifting up and down your house? But when you are gluten free, those usually are off limits. This recipe is the perfect gingerbread cookie recipe that is gluten free. You can't even tell the difference!
Step 1: Butter and Coconut Oil
Allow 8 tablespoons butter to sit until room temperature, then add 4 tablespoons coconut oil.
Step 2: Sugar
Add 1 cup brown sugar.
Step 3: Molasses and Honey
Add 8 tablespoons molasses and 2 tablespoons honey. This will keep it sticky and moist.
Step 4: Vanilla
Add 1 tablespoon vanilla extract.
Step 5: Eggs
Add 2 large eggs, then mix on medium speed for 1-2 minutes, or until fully incorporated and smooth.
Step 6: Spices
Spices are what make these cookies so much different and so much better! Just wait until you bake the cookies! Your house will smell so good!
1/4 teaspoon all spice
1 tablespoon cinnamon
2 teaspoons ground ginger
Step 7: Baking Soda and Xanthan Gum
Add 1 teaspoon baking soda and 2 teaspoons xanthan gum.
Step 8: Corn Starch
Add 1/2 cup corn starch. It really helps with the texture!
Step 9: Oat Flour
Add 2 1/2 cups oat flour. Mix on low speed until fully incorporated. Dough will be very thick and sticky.
Step 10: Set Dough in Fridge
Take your cookie dough and allow to set in fridge for 1 hour at least, more time hardens the dough and makes it easier to work with.
Step 11: Roll Dough Out
When dough is hard, or after an hour, take the dough out. Make sure that you flour a surface to roll your dough out on. Using a spoon or spatula (I found I needed to use something harder to scrape out the dough) make a circle of dough in the center of the floured surface. Lightly sprinkle the dough with flour, then roll out.
Step 12: Cut Cookies
Taking a cookie cutter, cut cookies. Keep rolling out the dough until you have no more dough. I got roughly 3.5 dozen and I used decent sized star cutters.
Step 13: Bake
Gently move cookies from floured surface to your cookie sheet. Set in oven and allow to bake for 8-10 minutes, depending on how soft you like your cookies.
Step 14: Icing
While cookies are baking, make your icing.
Stir together 2 cups powdered sugar, 1 cup butter (at room temperature), 1/2 tablespoon vanilla extract and 2 tablespoons cream.
Step 15: Cool
When the timer rings, take cookies out of oven and allow to cool on cooling racks for 10-20 minutes before frosting.
Step 16: Frost
When cookies are cool, have fun frosting your cookies however you like!
