Introduction: Hamburger Stew
This easy 1 pot meal is ready in about 1/2 hour, uses a bunch of leftovers and is a filling meal. When I make a full pot, we freeze about half of it to use for another meal
Step 1: Prep
When I make a stew, I let my leftovers guide me so they are never the same twice. For this one I used about 1 1/2lbs ground beef, 2 green peppers, 4 green onions, 4 or 5 potatoes, 3 handfuls of veggies, 1 heaping tsp minced garlic, Italian seasoning, montreal steak spice, beef soup stock, salt and pepper. Cut everything to bite size. Lightly brown ground beef, I use lean so I don't drain it but if you use regular ground beef drain some of the grease off. Add garlic, onions, peppers and let cook on med low for a couple minutes. Add soup stock, veggies and potatoes. Add just enough water to bring the level of liquid up to about 1 or 2 inches under the potatoes. Add seasonings and spices to taste, I use about 1 Tbsp of Italian seasoning, 1 or 1 1/2tsp steak spice, salt and pepper to taste. Cook for about 15 minutes on med high until the potatoes are pretty close to cooked.
Step 2: Thicken and Serve
Dissolve about 1 cup corn starch or flour in about 3 cups cold water using fork or egg beater. Turn stove to high and when the pot starts boiling fairly well stir in about 1/3 of the starch(flour). If the stew isn't thick enough yet, stir in another 1/3 of the flour or so until the stew is the desired consistency. Scoop into bowls, allow to cool a bit and dig in
