Introduction: High Cal Harvest Sand
Have you been bent over against the driving rain and sleet, bringing in your precious garden harvest?
Maybe you have been crouched in the forest along a country road, huddled as the wet snow flakes fall straight down, while you doggedly pluck nature's bounty from the wilderness - wild cranberries and wild mushrooms.
Whatever your particular challenge, you probably deserve a pick-me-up.
Here's a sandwich to replenish all those calories (kJ) you burned up while toiling in the great outdoors.
Step 1: Get Your Ingredients and Get Going
Let's say you've been picking cranberries (though it could be raspberries from your garden).
Hopefully you have some nice artisanal bread.
Go ahead and slice off a couple of substantial tranches - and put it in the toaster.
You'll need to lay down a foundation of chunky peanut butter (or almond or cashew) on one slice of toast.
On the other, put down a generous layer of whipped cream (maybe left over from when you made some of my Personal Pavlovas).
Sprinkle onto the whipped cream as many of those precious berries as will fit.
Put the two halves together and take a big bite - You deserve it!
