Introduction: Homemade Paneer (Cheese) From Scratch

Today, we are making homemade paneer, or cheese. We are making it homemade because it is fresh and soft and has a great natural taste. Paneer is very popular among vegetarians because it is a great substitute for meat, and you can also fit it to your needs.

Supplies

  • Juice of 2 lemons
  • 1 gallon of full-fat milk
  • Cloth

Step 1: Boil the Milk

First, pour a gallon of full-fat milk into a big pot. Heat it up enough to the point where it starts to boil. Make sure to keep your eye on it since it can spill very fast which will cause a mess.

Step 2: Add the Lemon

Now add the lemon juice to the boiling milk. While adding the lemon juice some seeds might fall in, so if they do scoop the seeds out with a spoon since you probably don't want to eat them! The lemon is to make the milk into curdles. Once you add it, the change will happen immediately. Keep stirring, the milk will fully curdle in 1-2 minutes. You can now turn off the heat on the stove.

Step 3: Strain It

The next step is to strain it. Drain the curdled milk solids into a strainer and rinse with cold water to get rid of the lemon taste.

Step 4: Make the Form

Take a deep dish and cover it with a cotton cloth. Add the curdles on top of the cotton cloth. Now wrap it, and put a weight on top of it to squeeze out the excess water. You need to wait for an hour to let it get its shape into a solid block. Now you're done! You can cut it into your desired shape and add it to your recipes. This is great if you're vegetarian because you can use it as a substitute for chicken in almost any recipe.
