Introduction: Hot Dog Biscuit Cups

I had some extra biscuit dough and some hot dogs from our local butcher, Bluescreek Farm Meats. It occurred to me to make hot dog cups, but I wanted them to look a little different, and this is the result. I hope you like them.

Ingredients:

  • 1 recipe Mock Clabber Biscuits or 1 can store-bought biscuits
  • 1/2 red onion, diced
  • 1/2 orange bell pepper, diced
  • 1/2 cup shredded pepper jack cheese (or cheese of your choice)
  • Cooking spray or oil
  • 3 hot dogs

Step 1: Dough

Preheat oven to 425 degrees Fahrenheit.

Roll out the biscuit dough into a cylinder and divide into 6 pieces. Roll pieces out flat and press into an oiled or sprayed muffin pan. The biscuit dough should come up about 3/4s of the way.

Step 2: Slice Dogs

Slice the hot dogs in half and slice an "X" into the each end about 1 inch deep.

Step 3: Construct

Place a half hot dog into the biscuit dough and surround it with a little cheese, then a little pepper, then a little onion. Top with cheese.

Bake in 425 degree Fahrenheit oven for 15-20 minutes or until the biscuit is golden brown. Allow to cool for 5 minutes, then turn over the muffin tin to remove the hot dog cups.
