Introduction: Citrus Chicken
For this recipe you are going to need:
8 pieces of bone-in chicken
2 tbsp sugar
1 tbsp italian seasoning
1/2 tsp paprika
4 cloves of garlic, minced
1 tsp onion powder
1/4 c olive oil
1 tbsp rosemary
1/4 tsp salt
1/8 tsp pepper
1 tsp thyme leaves
1/8 tsp cayenne pepper
2 oranges
2 lemons
Step 1: Score!
When scoring the chicken, instead of cutting in to the meat, leave the skin on and cut the skin in 3-4 snips. The meat will cook crispy and juicy without drying out.
Step 2: Combine (most) of the Ingredients
In a medium bowl, combine the oil and all of the seasonings EXCEPT for rosemary and thyme.
Step 3: Juicy
Add the juice of one lemon and the juice of one orange, stir until combined.
Step 4: Tis the Season(ing) of the Chicken
Pour your mixture over the chicken that is placed in a baking dish. Of course, if you have time to marinate the chicken for a few hours (or overnight) that is always the best, but it will still turn out great even if you don't.
Step 5: Thyme for Rosemary
Add the thyme and rosemary to the chicken.
Step 6: For That Other Lemon and Orange
Slice the other lemon and orange and cover the chicken completely with the slices.
Step 7: Bakin'
Place in the preheated to 400° oven and bake for an hour or until the chicken is thoroughly cooked and the juices run clear.
