Hi Everybody,

This instructable is about an interesting Jam recipe. It's very basic method of making Jam and yet taste's yummy. It's the season of this special fruit in my country.. Its called Indian Blackberry / Java Plums. Sweet yet slight sour when its not riped.

Step 1: Ingredients

1) Medium Ripe Java Plums - 1 Bowl

2) Brown Castor Sugar - 1/2 Cup

3) Lemon juice - 2 tsp

Step 2: Boil Jamun

Pour water and Java plums in pot and let it boil at low heat for 10 mins. Once cooked the plums start losing its colour into water and gets bulged with tenderness.

Step 3: De-seed

Once it transfers it beautiful colour and become tender remove from pot and de-seed it after its gets cooled

Step 4: Blend

You can hand smash it too for having a rough coarse sand texture, but i used blender to have a smooth paste texture jam

Step 5: Puree to Jam

Again add the boiled , blended puree to pan and add brown castor sugar. Mix well, funny part is i saw a immediate colour change from Purple to Red wine, which was mesmerising :)

Step 6: Bubbling Stage

Once the sugar dissolves in puree, add lemon juice and mix evenly , it turns from puree stage to gel paste stage. Don't overcook as once its cooled it might gets more stickier. so switch off in the stage as shown in video.

Step 7: Try This Spicy Jam

With Some Left over Puree (1/4 cup puree), add a 1 tsp of pepper powder, 1/2 tsp chat powder, pinch of salt and few drops of lemon juice and boil until water evaporate.. It will have thick consistency as in last pic.

Step 8: Thank You
