Introduction: Making Fish Cakes - Salmon and New Zealand Hoki
I submitted a recipe a few weeks back for plain Fish Cakes and this got plenty of interest - thank you! So today I wanted to do a variation where I've used a combination of salmon and beautiful New Zealand hoki.
Step 1: Ingredients
- 2 Kg hoki (this fish is found in waters around New Zealand but you can use most white flesh fish available to you)
- 800 grams (2 tins) salmon
- 2 Kg potatoes (cooked and mashed)
- 2 large onion
- handful of fresh herbs (I've used an Italian herb mix)
- 200 mls water
- salt and pepper to taste
Breadcrumb coating
- four eggs
- a little water
- breadcrumbs (we've used Sourdough Bread Crumbs)
Slice the hoki up and put in a fry pan, adding enough water for it to simmer over a medium heat.
Step 2: Simmer Down...
The fresh fish will cook in about 20 minutes...it's done when the flesh has turned white.
Scoop out the fish draining the liquid into a jug (don't discard this liquid as you can use it for fish stock or the base in a quiche and other meals).
Drain the salmon (again keeping the liquid) and add to the cooked fish.
Note to self: Get a larger lid for that fry pan!
Step 3: Combine
We've halved the fish (shown bagged up) and put aside for use another time .
Add the mashed potato, finely chopped onions, fresh herbs and mix together.
Pro tip: You can add other variations here - try some lemon flavoring or even add a small amount of cheese.
Step 4: Now You're Having a Ball...
...a ball of fish cake, that is!
This is the fun, tactile part of the recipe and if you have little children around get them to help out...they'll love it.
Take a portion of the mixture and roll it to the size you want.
Step 5: Taking a Whisk With the Egg Coating
Add the eggs to a bowl and whisk them together, adding a little water to thin the mixture down.
Step 6: Crumbs, We're Nearly There!
Dip each cake into the egg mix then roll it in the breadcrumbs.
Place on an oven tray ready for baking.
Cook at 180C (360F) for around 30 minutes depending on how many you are cooking. They're done when lightly browned.
Step 7: Serve
These fish cakes are a really nice, healthy snack or can form part of a meal. We eat them along with home Baked potato chips.
These fish cakes are fantastic when dipped in sweet chili sauce and can be eaten hot or cold. They can also be frozen and reheated for a later time.
