Introduction: Making Lemon Cake
I found this delicious recipe ages ago on the internet. This cake is so yummy and will fit your wish list for something sweet and delicate.
Step 1: Gather Ingredients
For this recipe you will need the following for the cake: 3 Large Eggs, 3/4 Cup of Flour, 3/4 Cup of Sugar, 3/4 Cup of Unsalted Butter (Room Temperature), Zest of 2 Lemons. For the cake's drizzle you need to collect: Juice of 2 Lemons, 1/2 Cup Powdered Sugar.
Step 2: Prep
Grease a loaf pan and pre-heat your oven to 350F.
Step 3: Dry Ingredients
First, blend together the dry ingredients for the cake batter in a large bowl. These dry ingredients include the flour and sugar. Next, do the same for the "wet" ingredients, the eggs, butter, and zest. The butter might make it a bit difficult to blend , so it's really important for it to be at room temp. If you don't have enough time to wait for it to get to room temp, microwaving it for 15 seconds is good as well.
Step 4: Combine the Ingredients
Now, take the dry and "wet" ingredients and combine them. The cake should be blended until it's a "smooth" batter. Pour into your greased pan and place into your oven. The timer should be set for 30-35 minutes.
Step 5: Glaze Time
Since you have 30 minutes to spare, prepare the icing. Mix together the powdered sugar and the lemon juice until it's smooth, and place it to the side until you need it.
Step 6: Checking the Cake
At the 30 minute mark pull the cake out. Take a toothpick and insert it into the middle of the cake. If the toothpick comes back out without any crumbs, then your cake is done. If there are crumbs on the toothpick place the cake back in the oven for a few minutes.
Step 7: Glazing the Cake
After removing the cake from the oven keep the cake in the pan. Poke holes all over the cake, be sure that the holes go all the way to bottom of the cake. Pour the glaze that your prepared earlier over the cake. Allow the cake to sit and cool until the glaze is hardened. After it has cooled, remove the cake from the pan and ENJOY!!!
