Introduction: Mexican Breakfast Burrito

A great delicious way to do breakfast before school or work. Full of energy and bursting with flavors!!

Step 1: Fresh Ingredients

Ingredients
-burrito wrap
-potatoes
-chorizo
-bacon
-mushroom
-mexican mixed cheese
-garlic
-tomato
-onion
-lemon
-cilantro
-eggs
-olive oil
-mayonaisse
-tabasco
-sriracha
-salt and pepper

Step 2: The Prep

The prep
-peel and dice potatoes
-chop chorizo
-dice bacon
-slice mushroom
-chop onions
-chop tomato
-mince garclic
-chop cilantro

Step 3: Pico De Gallo

Instructables
-mix tomato, onions and cilantro in a bowl
-zest lemon and squeeze the juices inside the bowl
-add salt and pepper to taste
-mix well

Step 4: Chipotle Mayonaise

Instructables
-1/2 cup mayo
-3tablespoon sriracha
-1teaspoon tabasco
-mix all the ingredients well
-add pepper to taste

Step 5: The Cooking

The cooking

Bacon
-cook bacon with no oil or butter
-let it sweat and release all the fat
-cook till crispy
-strain the fat and save it

Chorizo
-use bacon fat to cook of chorizo
-ground it up with a spoon while cooking
-strain all the juices and save it

Mushroom
-use a part of the meat juice to saute the garlic and mushroom until cooked

Potato
-coat the potato with the meat juice
-let it soak
-strain and let it dry
-set oven to 350f
-cook potatoes for 30-35min

Egg
-cook the eggs on your choice
-scramble, sunny, over easy, over hard, its totally up to you

Step 6: Organize

Get your station set up where everything is ready to grab and reach and all ready to be made into a delicious burrito!

Step 7: TIME TO SET UP THE AWESOMENESS

Instructables
1st-make sure the wrap is fresh and not dried up
2nd-coat the inside of the wrap with the awesome chipotle mayo
3rd-add a little potatoes on a line
4th-add a little chorizo parallel to the potatoes
5th-add a sprinkle of the crispy bacon
6th-add a little mushroom
7th-lay the egg on top
8th-sprinkle the mexican mixed cheese

*fold two parallel sides of the wrap thats against the line arrangement of ingredients
*on the other side parallel to the ingredients start rolling carefully
*when reaching the end add a touch of mayo to close it up
*toast the burrito in a hot griddle or pan totally up to you, just enought to crisp it up
*and its ready to serve

Step 8: SERVE THE SEXY BURRITO

Rather than worrying about the presentation, just cut it in half , add more chipotle mayo around it and shove that delicious burrito in your mouth!
