Introduction: Mountain Bread™ - Spanakopita
Mountain Bread Spanakopita is a classic recipe that everyone loves!
Replace pastry for Mountain Bread and you have a delicious healthier alternative!
What you will need:
- Mountain Breed of choice
- Spinach
- Onion
- Garlic
- Eggs
- 250g Feta
- 300g Ricotta
- Oil
Step 1:
Peel and chop onion and garlic. Heat oil in a saucepan and add the onion and garlic.
Cook until brown, then add the spinach.
Step 2:
Once spinach has wilted, drain any excess moisture.
Step 3:
Get a bowl then crack and beat the two eggs.
Step 4:
Crumb the feta in bowl, add the ricotta, and the eggs. Then add salt and pepper to taste and mix.
Step 5:
Coat an oven dish with oil. Layer 4 sheets of Mountain Breed, brushing each sheet with oil.
Step 6:
Spoon in mixture and cover with another 4 sheets of Mountain Bread, brushing each piece again with oil ensuring all edges are coated well and fold into shape.
Step 7:
Place in the oven for 20 minutes until golden.
Step 8:
Cut and serve with any side dish!
