Introduction: Muffin Special - Quick Vegetarian Breakfast
This is a snack idea I got from a friend and have made loads of times. They called it the "Muffin Special". It makes a simple breakfast, or can be used for a quick food fix at any time.
Supplies
All you need for this is a pack of English muffins, plus butter or margarine with cheddar cheese, marmite and houmous.
Step 1: First Catch Your Muffin
Start by toasting an English muffin, or "breakfast muffin". These are sold everywhere in the UK and I just call them muffins, but "English muffin" is used to distinguish them from those large chocolate buns.
Step 2: Butter or Marge
I usually prefer butter with toast, but I use margarine for these as it melts quickly, keeping the muffin hot, without adding its own flavour.
Step 3: Marmite Spread
One half should be thinly spread with Marmite. (Here I'm using Natex, which is a great gluten-free alternative.)
Step 4: Cheddar Gorged
Add a few slices of cheddar, preferably the strong stuff.
Step 5: The Final Step - Houmous
Finally, add a generous dollop of houmous and spread it over the cheese. Some people seem to find this combination a little strange, but it's fantastic.
(There's something called the "Paul McCartney sandwich" which also combines cheese, marmite and houmous, in a bagel, with lettuce. Now, that's strange. He seems to like it though.)
Step 6: Go to Work on a Muffin
...and that's it. Muffin Special to go.
