Introduction: Red Potato and Sweet Pepper Salad

Red potatoes dress up this flavorful salad with a watery sweetness of red bell pepper and even some orange zest in the spice mix. This vibrant vegetable the red bell pepper is a good source of valuable nutrients, fiber and antioxidants. It is available year-round, though red bell peppers are at their peak in August and September.

One cup of chopped red bell peppers provides more than 100 percent of the daily value of the antioxidant vitamin C, which helps support your body tissue health and immunity. There is also 3.3 grams of fiber per that one cup of red bell pepper and has 261 mg. of potassium. This mineral keeps your fluids and minerals balanced in your body, also helps with muscle function and regulating your blood pressure.

Here is what you will need...








Step 1:

2 lbs. medium red potatoes, washed, diced into 1 inch chunks
1 onion, medium, cut ½ inch slices
1 red bell pepper, large, diced
2 celery ribs, diced ½ inch slices
8 oz. package cream cheese, soft
2 tsp. spice mix *

The spice mix is:

*1 tbsp. granulated garlic
½ tbsp. onion powder

SPICES include: 1 tsp. dried parsley, ½ tsp. black pepper, ¼ tsp. paprika, ¼ tsp. salt.
Mix together and measure out 2 tsp. and mix with 1 tsp. orange zest, finely grated.

Do not mix the zest with the spice mix. You will only use 2 teaspoons from the mix. The rest you will save. But the fresh orange zest will not last without spoiling in a few days. Maybe up to 5 days in the refrigerator. 


Step 2:

Prepare potatoes and place into a steamer for 8 to 10 minutes or just until tender. Remove from steamer and place into a large mixing bowl.

Step 3:

Next mix the 2 teaspoons of spice with the 1 teaspoon of orange zest. Making sure the zest is finely grated. Mix with the soft cream cheese in a small bowl until well incorporated.

Step 4:

Place diced and cut vegetables into the large mixing bowl with the red potatoes, mix together until will incorporated. Next add the cream cheese/spice mixture to the potato mixture. Stir and mix in well.

Step 5:

Plate and serve with your favorite meal.

Here we have served the "Red Potato and Sweet Pepper Salad" with some sliced BBQ chicken breast and some pieces of cilantro. Cilantro is not only good for flavoring food, but is also good for digestion.
