Introduction: Scotcheroos
In this Instructable, I will show you how to make Scotcheroos at home. If you like peanut butter, chocolate, fudge, and Rice Krispies, you will love this easy homemade Scotheroos recipe. This recipe was introduced and originally printed on the Rice Krispies box by Kellogg's back in the mid-1960's. If you are a fan of Rice Krispies treats then you have caught to try these. And they are so easy to make with only 6 ingredients. If I can do it, you can do it. Let's get started!

Step 1: Ingredients and Tools
Ingredients:
- 1 cup white granulated sugar (200g)
- 1 cup corn syrup (340g)
- 1 cup peanut butter (240g)
- 6 cups crisped rice/Rice Krispies (164g)
- 1 cup semi-sweet chocolate chips (170g)
- 1 cup butterscotch chips (170g)
Tools:
- Pots
- Bowls
- Spatula
- Spoon
- Parchment paper or cooking spray
Step 2: Heat the Sugar and Corn Syrup
In a medium pot, add the white granulated sugar and the corn syrup. Set the pot on the burner and set the heat to medium. As the mixture heats up, stir it with a spoon, as the sugar melts, and bring it to a boil. Once it starts to boil, keep stirring for 15 to 20 seconds then remove it from the heat.
Step 3: Add the Peanut Butter
Immediately add the peanut butter and stir it in, until it melts and the mixture is nice and smooth.
Step 4: Rice Krispies
Pour the peanut butter and sugar mixture over a large bowl full of the crisped rice/Rice Krispies cereal, and stir it in until coated. Work quickly, because the mixture sets fairly fast as it cools. Pour the mixture into a 9x13 inch baking pan that is lined with parchment paper or sprayed with cooking spray. Spread it out and push it down, until evenly distributed in the pan. Set that aside for now.
Step 5: Chocolate and Butterscotch Time!
Time to melt the chocolate chips and butterscotch chips. There are a few ways you can do this. The fastest way is to use a microwave-safe bowl and melt them in the microwave. Heat for 30 seconds, then stir the chocolate, 30 seconds, then stir, until it is all melted and smooth. I do this way often.
Another way is on the stovetop. Take a small pot and add about an inch of water to the bottom. Take a large pyrex or metal bowl and place it on top of the pot. Set the burner heat to medium. As the water heats up the steam will warm the bottom of the bowl, gently melting the chocolate. Make sure to stir periodically as well.
Pour the melted chocolate on top of the Rice Krispies base, and spread it out evenly.
Step 6: Cool and Serve
Allow the pan to cool down for 20 minutes or so, and then you can place it in the fridge so it can chill and allow the dessert to set. This will take 45 minutes to an hour or so, maybe a bit longer.
Remove the pan from the fridge, and lift on the parchment paper which will easily remove the whole thing. Cut it into squares and serve! This will make 32 to 36 squares depending on the size you make them. Enjoy!
*Store in an airtight container on the counter for a couple of days or in the fridge for about a week. Set out for 15 minutes before serving.
