Introduction: Sherry and Mushroom Soup

A very quick and an  easy recipe called Sherry and Mushroom soup.This can be  enjoyed  after a hard days work on a cold winter day.
Serve hot with garlic bread..Taste super.

Step 1: Ingredients

450 gr  mushrooms
1  Big Onion
2 Garlic cloves
50 gr butter or Margerine
50 gr plain flour
300 ml milk
600 ml chicken stock
2 tblespoon sherry
Salt and Pepper

For Garnish
150 ml single cream
Chopped parsley

Step 2: Make Stock

900 ml Water
Chicken bone with a little bit of chicken on it
2 pinch of salt
few pepper cones

Crush the pepper cones and boil all  together,Let it simmer on slow fire for some time until the water quantity reduces.Drain and use the stock.

Step 3: Cook

Cook the finely chopped onions and grated garlic in the butter or margerine until softened.Stir from time to time.

Step 4: Add Mushrooms

Thinly slice the mushrooms,Add the mushrooms and cook gently  on slow fire  until the quantity reduces to half.

Step 5:

Stir in the flour,gradually  blend in the milk and stock.Bring to the boil,reduce the heat and simmer gently for 15 minutes.
Stir the soup frequently to ensure  a smooth consistency.Add the sherry and season to taste.

Step 6: Chopp Parsley

Chopp Parsley to garnish

Step 7: Done

Add pepper and salt last and garnish the soup with a swirl of cream and sprinkle with Parsley.
Hmmm very much liked by my play school kids.

TIP :

If you want low calorie Sherry and  Mushroom soup, then omit butter,flour,milk cream and onions.
Cook Mushrooms in 900 ml stock .Add chopped spring onions and Sherry only.
