Spicy Harissa Veggie Walnut Pâté
I am not sure whether this dish should be called a veggie nut loaf or veggie pâté. It has the depth and look of a loaf but is also spreadable like pâté. Regardless of whether it is considered a loaf or pâté, it is delicious and so versatile! I am always looking for ways to incorporate more vegetables into my diet and this recipe is perfect. Chock full of antioxidant rich vegetables like broccoli, red pepper and sweet potato, it also includes almond flour and walnuts resulting in a satisfying, nutritious, textured pâté that is perfect on its own, in salads, on crackers or on toast.

Ingredients
1/4 cup mayonnaise
3/4 cup almond flour
1 cup chickpea flour
1 teaspoon baking powder
1 teaspoon salt
4 tablespoons harissa (or more according to taste)
1 egg, beaten
4 tablespoons coconut milk
1 medium carrot
1 red bell pepper
1/2 sweet potato
1 small broccoli head
1 cup walnuts
1 tablespoon sunflower seeds

Oven
2 medium bowls
Food processor
Grater
Measuring cups
Measuring spoons
Wooden spoon
Vegetable peeler
Knife
Chopping board
Parchment paper
8” x 8” baking dish
Step 1: Pre-heat Oven
Pre-heat oven to 350F.
Step 2: Mix Ingredients
In a large bowl mix together mayonnaise, flours, baking powder, salt, harissa, egg and coconut milk.
Step 3: Prepare Vegetables and Nuts
Grate carrot and place it in a large bowl.
Finely chop red pepper and place this in bowl with grated carrot. Peel and grate sweet potato and add to bowl along with finely chopped broccoli.
Finely chop walnuts and add to mix.
Step 4: Blend All Ingredients
Place flour mix in a food processor and add in vegetables and walnuts. Mix for approx 1 minute.
Step 5: Pour Into Prepared Dish
Pour mix into an 8”X8” baking dish, lined with parchment paper.
Top with sunflower seeds.
Step 6: Bake
Cook on the lower shelf of oven for approx. 50 minutes.
Remove from oven, allow to cool for 5 minutes then cut into slices.
Serve warm or cold with salad or on toast or crackers.
