Introduction: The Aloo Kachori Recipe (Potato Stuffed Kachori)
The Aloo kachori recipe (Potato Stuffed Kachori ) prepared with spicy potato stuffing. An ideal evening snack recipe or also can be served as breakfast. This recipe is similar to the traditional Khasta Kachori or Dal Kachori . Aloo kachori is a famous North Indian street food snack recipe and it is generally served with tomato sauce or green chilli sauce or Curd (Dahee) which enhances its taste.
Supplies
- 1 Large Fry pan for frying/ wok
- 1 Cutting board
- 1 Kitchen knife
- 1 Mesh skimmer
- 1 Wooden rolling pin
Step 1: Ingredients
- Salt
- Potatoes
- Red Chili sauce
- Turmeric powder
- Cumin Seed powder
- Dry Mango Powder
- Vegetable Oil
- Ghee/ Butter
- Green chilies
- Coriander leaves
- All purpose flour
- Tomato
- Cucumber
Step 2: Dough Preparation
- 2 cup flour
- ½ tsp salt
- 2 tbsp Ghee/ Butter
- 1 cup water
- First, prepare the dough by taking 2 cup flour, ½ tsp salt and 2 tbsp Ghee/ Butter.
- In addition, add water little by little and knead well till you form smooth and soft dough.
- Then cover it with moist cloth and keep aside for 20- 25 minutes.
Step 3: Potato Stuffing Preparation
- 2 green chillies (finely chopped)
- ¼ tsp turmeric / haldi
- Pinch of (hing) asafetida
- ½ tsp red chilli powder
- ½ tsp cumin seed powder
- 2 potato (boiled & mashed)
- ½ tsp dry mango powder
- ½ tsp salt
- 2 tsp vegetable oil
- Finely Chopped Coriander leaves
- Prepare the stuffing by adding 2 tsp vegetable oil, ½ tsp cumin seed powder, finely chopped coriander leaves, ½ tsp salt to the 2 Boiled and mashed Potatoes.
- Now add 2 green chillies (finely chopped) , ½ tsp dry mango powder, ¼ tsp turmeric / haldi, Pinch of (hing) asafetida, ½ tsp red chilli powder and mix well.
- Now, The Potato stuffing is ready.
Step 4: Kachori Preparation
- Take some amount of dough and make a small lemon sized ball and flatten it with the help of wooden rolling pin.
- Now add 2 tsp of prepared Potato stuffing and place it in the centre of flatten dough .
- Fold the edges of dough together and form a bundle.
- Close the top of the bundle by pressing it.
- Now, gently press the edges and flatten to form a disc size.
- Put the Vegetable oil in Frying Pan/wok and when the oil is medium hot, add half prepared kachori into it and fry. Fry aloo kachori on medium flame else they will not be crispy.
- Do not touch it for a minute or till they float. Then press with the mesh skimmer to puff up turn around and fry the kachori till it turns golden brown all over.
Step 5:
Finally, The Aloo Kachori is prepared. You can serve as it is or with green tomato sauce or green chilli sauce or Curd (Dahee) and salad which enhances its taste.
