Introduction: Ukrainian Greek Bread

This is a dish from the Ukraine called Plakopsy or Greek Bread, I thought this was great as I am part Ukrainian and I also love Greece! In ancient times Greece had a lot to do with the Ukraine, they traded for wheat and they had colonies, first in the Crimea for centuries and when Catherine the Great anexed the Crimea they were relocated in the northern shores of the Ukraine, so the dish is a good mix.

Supplies

This recepie is for about four people. You need:

7fl oz (200ml) cold water

14&1/2 oz (450g) plain flour and a bit for dusting

13oz (400g) Feta cheese

2fl oz (50ml) Sunflower oil and a bit for brushing

1 Egg (beaten a little)

10 Spring onions chopped roughly

Salt


Step 1: Make the Dough

First off, you want to mix the water, egg, pinch of salt together, best done in large bowl, then gently add the flour taking care to mix it in with your fork. Then knead it with your hands.

That done you can well dust your worktop with flour which will make the kneading and rolling out easier...

Step 2: Make the Filling

Second you can crumble up the Feta and chop up the onions if not already done add a bit of salt and mix together in another Bowl

Step 3: Roll It Out

After being satisfied that it is kneaded enough, you can divide the dough into four parts, then taking it to your well dusted worktop start rolling out a circle, this is about 12in (30cm) diameter, when done brush some oil on the surface

Step 4: Fill It Out

Divide your filling also into four parts, then take the first part (saving a little bit on the side) and put it onto the dough circle leaving about 2in (5cm) of the boarder free

Step 5: Pull in the Sides

Now fold in the sides of the circle so they overlap each other and again Brush the dough with oil, then put the rest of the filling on it

Step 6: Fry It Up!

When you fill it then pull the top and bottom together and you are ready to Fry it place in your Skillet/Frying pan with the oil and fry them for three minutes on each side. and repeat with the other three portions of dough/Filling or make all four and fry them one at a time.

Usually they are eaten with a Greek Joghurt, Kefir or Salty Ayran These Babies really fill!

This is easy peasy and tastes great.
