Introduction: Vegan Gin and Tonic Cupcakes
This week, I took out all the eggs and dairy, and replaced it with GIN! What a wonderful plan. Inspiration came from a Vegan Cupcake book borrowed from a friend (hey Alison, I promise to give it back...) and I am now obsessed with their delicious boozy spongey flavour and texture. Check out the full recipe on my blog, but first, gather your ingredients.
Mostly gin, some tonic, vegan butter, sugar, flour, oil, 1 lime, shortening, soy milk, apple cider vinegar, baking powder and baking soda!
Cake
250ml of soy milk | 1 tsp of Apple Cider Vinegar | 350g plain flour | 2tbsp corn flour | 1/2 tsp baking powder | 1/2 tsp baking soda | 80ml of rapeseed/canola oil | 180g of caster sugar | Gin | Tonic | 1 Lime (zest, keep the lime)
