Vegan Pumpkin soup with pumpkin sweet potato fries! My roommate is Vegan and she challenged me to make her something with the pumpkin before it went bad. She was feeling a little under the weather. So she killed 2 birds with one store she "inspired" me to make a how to.

Supplies

Pumpkin 2kg

1 Sweet Potato

1 Shallot 

2 cloves Garlic

2 Tablespoons Parsley 

Salt & pepper

2 Tablespoons Sunflower Oil 

2 Cups Vegetable broth


Cook times

Soup Pieces 10 minutes @ 185C Turn over and repeat.

Fries Bake 20 minutes in oven @ 200C.


She requested I leave the skins on.

My friend requested the fries to be cooked extra well. She dips them in the soup/dip.

I split the cooking 2 ways. The soup pieces I cooked in the Air fryer. The fries were cooked in a convection oven.

*Tip due to the extended cooking time it’s best to make sure the fryer is clean. Anything left at the bottom will burn and smoke up the kitchen.

Step 1: Soup

Step 1 Split pumpkin in half you bigger half for soup and the rest for fries. 


I cut the soup portion off into small pieces to cook fast in the air fryer. 


Toss the pieces in oil and sprinkle with salt. Lay pieces in the fryer

Fry 185c for 10 minutes. Turn the pieces over and repeat. 

  • The last 5 minutes i added the pumpkin seeds to toast.


Cook garlic and shallots in a pan with a tablespoon of oil for 1-2 minutes. Add the roasted pumpkin and veggie broth let simmer for 10 minutes.


Blend with stick blender or regular blender until smooth. Add salt and pepper to taste. Top with parsley.


Step 2: Fries

My roommate requested to keep the skin on. "Thats were all the earthy goodness comes from" She says.


Chop and slice the Potato and Pumpkin into sticks. Toss with 1 tablespoon oil and salt and pepper. Spread out even on baking sheet.

Cook for 200C for 20 minutes or till golden brown. I cooked for 30 minutes.

She requested I chop garlic and parsley to sprinkle on top of the fries. I plated it up and served her Lunch in bed.
