Introduction: Vegan Spam Musubi! (aka Tofusubi)

When I went vegetarian, one of the things I missed the most was spam musubi - a delicious islander favorite! This home cooked recipe comes pretty close to approximating the taste of spam, but used tofu and is completely vegan. Super tasty and much healthier than the original!

Supplies

Ingredients:
- Soy Sauce
- Sesame Oil
- Ginger
- Garlic
- Rice Cooking Wine
- Brown Sugar
- Rice (any type ok)
- Large Nori

Step 1: Prepare the Sauce

In a small bowl, combine:

1/2 cup soy sauce
2 tablespoons rice wine vinegar
2 tablespoon brown sugar
2 teaspoons sesame oil
1 teaspoon fresh ginger, minced well
1 teaspoon fresh garlic, minced well

Stir to combine!

Step 2: Cut the Tofu

Cut the packet of firm tofu into 8 even slices (sliced so that your knife aligns with the shorter side of the packet).

Step 3: Marinate the Tofu

In a large, shallow container, lay the tofu pieces flat. Pour the sauce over the tofu and let marinate in the fridge for at least 1 hours and up to 48 hours. Halfway through, flip the tofu so the other side absorbs sauce.

Step 4: Fry the Tofu

After marinating, drizzle a pan with oil and place the tofu. Cover pan for 3 minutes, then flip. Fry for longer for crispier tofu.

Step 5: Make the Rice

Prepare 3 cups of rice in a rice cooker.

Step 6: Layer the Ingredients

Cut the seaweed piece in half, lengthwise. Lay the seaweed flat. Line up the musubi maker with the seaweed, and add about 1/2 a cup of rice into the maker. Press the rice flat, then add a piece of tofu.

Step 7: Assemble the Spam!

Remove the maker and fold the seaweed, then add a small amount of soy sauce onto the seaweed to make sure it stays wrapped.

Step 8: Enjoy!
