Introduction: Veggie Thai Kabobs


Don't feel left as the vegetarian at a BBQ or settle for the plain veggie burger that is sometimes available. These kabobs are spicy, super-fruity and perfect for a summer evening.

Fruits and Veggies to Skewer
Pineapple
Peppers
Tomatoes
Onions

Fake Meat
Gardein Beefless Tips
 
Marinade
2 cups coconut water
1/2 cup coconut milk
3 Tbs lime juice
2 Tbs soy sauce
1 Tbs rice vinegar
1 Tbs agave
1 tsp chili powder
1/2 tsp cumin
1/4 tsp pepper
3 cloves garlic, minced
1" piece of fresh ginger, minced

Directions
  1. Chop up fruits and vegetables into about 1" pieces
  2. Mix all marinade ingredients in a bowl
  3. Add fruits, veggies and meat substitute
  4. Cover with plastic wrap and leave in the fridge overnight
  5. Skewer and grill for about 15 minutes
  6. Sprinkle with toasted coconut
  7. Serve with rice
Make up a batch ahead of time and bring them to the next cookout!
