Introduction: Wheat Buñuelos

This is more of a new years treat, but since I was making tortillas, I figured I could make a few buñuelos.  The difference between wheat tortillas and buñuelos is that the buñuelos are pan fried and sprinkled with sugar.  Buñuelos are perfect when you are craving something lightly sweet.

Ingredients:

  • 1/4 cup of sugar (I used sugar in the raw, which has large sugar granules, but smaller sugar granuales will coat more evenly and stick best)
  • 2 tbs of cinamon
  • (mix these up in a shaker)
  • 4 cups of wheat flour
  • 1 cup of coconut oil
  • 1 1/2 cups of warm water
  • 1/2 tbs of salt

Step 1: Blend

Using a pastry blender mix the flour, salt, and coconut oil evenly.  This will create a mixture that looks like brown sugar.

Ingredients:

  • 4 cups of wheat flour
  • 1 cup of coconut oil
  • 1/2 tbs of salt

Step 2: Add Warm Water, Mix, and Test

Ingredients: 
  • 1 1/2 cups of warm water  (Heat in microwave or on stovetop)

You want to add the warm water (90F) to the mix evenly into the mixture.
Your dough will not be sticky, and you should be able to form a ball.  

Once you have formed the ball you must ensure it will stretch and not break right away. See image.

Finally, let the dough cool to room temperature and get ready to roll. 

Step 3: Cut, Form, Press and Roll!

  1. Cut a piece off the dough no larger than a 2" X 2" and roll it into a ball
  2. The ball does not have to be perfectly smooth, with your palm, press the dough into a floured surface
  3. Roll the ball into a flat round-ish sheet.  This flour sheet will be see-through
  4. Repeat.  If you are making a full batch, you will make approximately 25 bunuelos
If you do not plan to make a full batch, cover the left over dough balls into individually wrapped pieces of saran wrap.  This will keep the balls from fusing when cooled.  Refrigerate for up-to 1 week.  When using refrigerated dough, allow it to come to room temperature before use.  

Step 4: Fry, Remove From Heat, Sprinkle With Sugar/cinnamon Mixture

On medium heat, in a pan with 1/4 cup of coconut oil...

Place the rolled out dough into the hot oil.  Let brown.  Flip once.  Remove from heat and immediately sprinkle with cinnamon and sugar.  Glaze with honey if desired.
