Introduction: Yummy Refrigerator Cake! - Not for Health Concious People! :D
This is my recipe for refrigerator cake, it is really yummy, and will not last long if you have a full house, however it is not really the most healthy thing around... !
oh and yes i'm aware that in progress, it's not the most delightful looking thing either! :D
the best thing about this recipe is that it uses such cheap ingredients, and is really nice, you can use quality ingredients but it tastes just as nice with basic ingredients
you can also chuck any other ingredients you wish, like pecans / walnuts / cherries etc - go nuts!
Step 1: You Will Need..
marshmallows - as many as you want
raisins - again as many as you want
chocolate - i used cooking chocolate as it's cheaper, but you can use whatever chocolate you like
margarine / butter - whatever you have on hand
digestive biscuits
1 medium sized saucepan
1 container for putting it in - i had used up my square shaped ones, so i used a circular one this time :D
raisins - again as many as you want
chocolate - i used cooking chocolate as it's cheaper, but you can use whatever chocolate you like
margarine / butter - whatever you have on hand
digestive biscuits

Step 2: How to Make...
weigh out the same quanity of chocolate to margarine -
125g chocolate broken into small pieces
+ 125g of margarine
put into saucepan and melt slowly over a gentle heat - make sure that the chocolate melts evenly and doesn't burn.
when fully melted, it will look very glossy
Step 3: Add the Biscuits
weigh out 250g of digestive biscuits - i weighed them out into a ziploc bag so i could then crush them easily without mess
crush into crumbs - i used a rolling pin to make it a lot easier
when crushed, pour into the melted chocolate and mix together
Step 4: Now the Fun Bit!
add the rest of the ingredients
I used raisins, and marshmallows
i made sure to cut up the marshmallows as they are big, but you can either keep them big or use mini marshmallows if you have them!
i didn't weight them, i just went by eye.
Step 5: Put Into Fridge!
that's it! spoon into a dish, i had a silicone one, so it was easy to get out once it had set, but i have used glass pyrex dishes before, and had lined it with cling film to make sure it would come out ok.
for extra choc kick i found a packet of choc-chips and sprinkled on top - i had tried to mix in the chips previously, but found that the melted from the warmth.
put into fridge, wait about 1-2 hours until set
cut into as many pieces as you want, and serve!
enjoy them while they last!! :D
