Introduction: Banana Bread Mug Cake Recipe
I love banana bread, so when I saw a mug cake version of it, I knew I needed to give it a go.
This banana bread mug cake cooks in under two minutes in the microwave and tastes very similar to traditional banana bread. It's a little sweeter and a bit denser, but it will definitely hit the spot if you're craving banana bread.
This mug cake is awesome with whipped cream or ice cream, too! I had a little Cool Whip left over from other recipes and put some of that on top. :)
Step 1: Ingredients + Mug & Microwave Info
- 1 tablespoon butter, melted OR 1 tablespoon of cooking oil
- 1 egg, beaten
- 1 tablespoon milk (can use regular, soy or nut)
- 1 very ripe banana, mashed
- 3 tablespoons of all purpose flour (make sure to scoop the flour out of the bag with a measuring spoon so you get enough!)
- 3 tablespoons brown sugar, lightly packed
- 1/2 teaspoon baking powder
You need a 12 oz+ mug for this! I'm using a 14 oz mug. Any smaller than 12 oz and you risk running over the edges. Plus, it's really hard to mix everything in a teeny mug.
The microwave I'm using is 1000 watts.
Try not to deviate from the ingredients above - I can't guarantee this will work if you substitute all the things. ;)
Step 2: Melt the Butter and Add the Egg and Milk
If you're using butter, throw it in the mug and pop it into the microwave for 15-20 seconds to melt.
If the mug is extremely hot after this, let it cool down until you can easily hold it. This will keep you from scrambling the eggs.
Add the milk first and then the eggs and mix everything together well with a fork. :)
Step 3: Add the Mashed Banana
Add the mashed banana into the mug and stir everything with the fork - you can be pretty rough with it to make sure it's all mixed well.
Step 4: Add the Dry Ingredients
Add the flour, brown sugar and baking powder.
Mix this well with the fork again - try to break up any clumps! Just don't mix it for too long or you'll have a chewy cake.
Step 5: Cooking
This cake will take between 1 and 2 minutes in the microwave.
Here's how I recommend cooking it:
- Cook the mug cake in the microwave for 1 minute at full power. Stand near the microwave to babysit it - if it starts to rise above the rim of the mug, open the door and let it fall. Once it's fallen, close the door and begin cooking again.
- After the first minute, check the top. Is is still wet? If so, do an additional 30 seconds.
- Continue cooking at 15 second increments if the top still looks wet after the initial minute and thirty seconds.
When it's done, the cake will look dry on top and be firm to the touch. It should pull away from the edges of the mug, too!
