Introduction: Blueberry Cream Cheese Turnovers

Need a fun dessert or breakfast that looks fancy but is really simple? You have come to the right place. These delicious pastries with a flaky crust and yummy violet colored filling are elegant and visually inviting.
This recipe is also great because it only uses 6 ingredients and bakes up in 20 minutes. One of the ingredients is puff pastry. You may have to make a special trip to the grocery store but it is worth it. I love to use puff pastry because it is very forgiving. It may not look pretty going into the oven but it always comes out looking like something purchased at a professional bakery.

Ingredients:
2 sheets puff pastry thawed ( I used a 17.3 ounce box of Pepperidge Farm Puff Pastry)
8 ounce block of cream cheese room temperature
1 egg
1 cup powdered sugar plus extra for garnish
1 cup frozen blueberries
1 teaspoon vanilla extract

Step 1: Preparing the Pastry

Preheat your oven to 400 degrees Fahrenheit. Take two sheets of puff pastry and place on parchment paper on a baking sheet. I used an 11 x 7 inch baking sheet. Cut each sheet into 9 squares for a total of 18.

Step 2: Preparing the Filling

In a food processor, add one block (8 ounces) of cream cheese.

Step 3: Preparing the Filling

Add 1 large egg.

Step 4: Preparing the Filling

Add 1 cup powdered sugar.

Step 5: Preparing the Filling

Add 1 cup of frozen blueberries.

Step 6: Preparing the Filling

Add 1 teaspoon of vanilla extract.

Step 7: Preparing the Filling

Run the food processor for approximately one minute on the slice/shred setting or until all ingredients have been incorporated. Don’t forget to scrape down the sides with a spatula.

Step 8: Filling and Baking

Add 1 tablespoon of filling to each puff pastry square. Fold pastry over to make a triangle. You don’t have to seal the edges. Bake for 20 minutes.

Step 9: Serve and Enjoy!

Ta da! Look how lovely these turnovers are! They look delightful and didn’t take a bunch of effort. I love a recipe like this. After removing the turnovers from the oven, sprinkle with powdered sugar and enjoy! You can serve these for breakfast or as a dessert.
If you want to serve these as a dessert, you can mix one cup of powdered sugar with 1-2 tablespoons milk and 1 teaspoon vanilla to make an icing to drizzle over the tops of the turnovers. It will harden slightly and look amazing.
