As we all know cauliflower is a low-carb vegetable and go-to solution for vegetarian keto recipes. You will definitely love this keto breakfast recipe.

LOW CARBOHYDRATE INDIAN KETOGENIC RECIPE

Step 1: Separate Cauliflower Into Stalks and Florets

Firstly separate cauliflower into stalks and florets.
Step 2: Cut Cauliflower Florets Into Cubes

Cut the cauliflower stalk into cubes - as cauliflower stalks are the better alternative for potatoes.
Step 3: Wash Thoroughly

Wash Cauliflower florets and stalk cubes thoroughly and let them dry.
Step 4: Grate Florets

Grate florets with the help of grater or food processor.
Step 5: Ingredients

1) Cauliflower (फूलगोभी) - 500g
2) Peanuts (मूंगफली) - 15 pcs.
3) Curry leaves (कड़ी पत्ता ) - 10, 12
4) Green Chili (बारीक़ कटी हुई हरी मिर्च ) - 2,3
5) Chopped Onion (बारीक़ कटी हुई प्याज़ ) - 1/2
6) Mustard Seeds (राई) - 1 tablespoon
7) Olive Oil ( ऑलिव ऑयल ) - 2 tsp.
8) Turmeric powder (हल्दी ) - 1/2 tablespoon
9) Salt to taste (नमक स्वादानुसार)
10) Coriander leaves(धनिया पत्ती ) - 20 grams
11) Lemon Juice ( नींबू का रस) - 1/2 tsp. Optional
Step 6: Roast the Peanuts

Roast the peanuts in a frying pan with one tablespoon of olive oil till they get a nice golden brown color and set aside in a bowl.
Step 7: Roast Stalk Cubes

In the same pan add mustard seeds and stalk cubes and roast the same for about a minute.
Step 8: Onion, Curry Leaves, Green Chili

Now add onion, green chili, and curry leaves and saute well for around a minute.
Step 9: Turmeric Powder, Salt & Roasted Peanuts

Then add turmeric powder, salt, and roasted peanuts. Mix well.
Step 10: Grated Cauliflower

Add in the grated cauliflower, mix well and cover and cook till tender.
Step 11: Lemon Juice (optional) and Cilantro

Now add around 1/2 tables spoon of lemon juice(optional) and chopped coriander leaves.
