Introduction: Pythagoras's Pi Pie

This Greek inspired pie is just down right delicious!  It is full of "Greeky, Geeky" ingredients and is super easy to make. 
The crust is chock full of pine nuts and the top is flaky layer after buttery layer of phyllo dough!  Inside is a multitude of  deliciousness, spinach, onions, garlic, feta, sun dried tomatoes and Greek olives!  This pie can be served for breakfast, brunch, lunch or dinner, and can be served hot, warm or room temp!

Step 1: Gather Your Ingredients!

Ingredients:
1 pie crust (store bought or home made)
1/2 cup pine nuts (1/4 cup chopped very finely, 1/4 chopped and reserved)
1 tablespoon olive oil
1 onion (chopped)
2 cloves garlic (minced)
2 cups spinach
1/4 cup sun dried tomatoes (chopped)
1/4 cup Greek olives (chopped)
1/2 cup feta cheese (crumbled)
2 eggs
1/4 cup milk
1 teaspoon sea salt
1 teaspoon black cracked pepper
1 teaspoon onion powder
1/4 teaspoon cayenne pepper
10 sheets phyllo dough (thawed)
3-4 tablespoons butter (melted)

Step 2: Pie Crust Gets Nuts!

Preheat your oven to 350 degrees.
On a lightly floured surface, lay out your pie dough. Sprinkle with finely chopped pine nuts and gently roll the nuts into the crust using a rolling pin. 

Step 3: Lay That Dough Down!

Lay the pie dough into the bottom of a glass pie plate (9 inch). Set aside.

Step 4: It's About to Get HOT in Here! Saute Your Filling

In a saute pan, on medium heat, add olive oil.  once oil is hot, add onion.  Saute for 3.14 minutes and then add garlic to the pan.  Continue to saute for an additional 3.14 minutes.  Add spinach to the pan and saute for an additional 3.14 minutes. Remove from heat and move mixture to a mixing bowl.  Let cool for 3.14 minutes.

Step 5: Mix It Up! Greek Style!

Once the spinach mix has cooled a bit, add sun dried tomatoes, olives, pine nuts and feta cheese to the spinach mix and stir to combine.

Step 6: There Are More Wonderful Things to Add to the Bowl!

In a small bowl, lightly beat the eggs and milk together until combined. Add the salt, pepper, onion powder and cayenne pepper to the egg mixture and stir to combine.

Step 7: Everyone in the Pool!

Add the egg mixture to the spinach mixture, and stir to combine.

Step 8: Pi Is Starting to Look Like a PI!

Pour the spinach mixture into the prepared pie plate.

Step 9: Layer After Layer After Flaky Layer!

Lay a sheet of phyllo dough on top of the spinach mixture and brush with a bit of melted butter.  Layer another sheet of phyllo, and then another bit of butter.  Continue until you have 10 layers of phyllo, and make sure you brush that top layer with butter!

Step 10: Pinch Me....I Must Be Dreaming!

Bring the pie dough up along the sides and pinch the dough over top of the phyllo, making the crust. 

Step 11: Throw Me in the Fire!

Place pie into the oven.  Bake for 30-35 minutes or until the top is a golden brown and the filling has set. 

Step 12: Serve Me Up a Slice of That PI Pie!

Serve hot, warm or room temp!
