Spätzle is a German side dish. It is a type of soft egg noodle that is very simple to make and very delicious when paired with a traditional Bavarian meal.

Step 1: Ingredients

1 cup all-purpose flour

1/2 cup milk

4 egg yolks

1 teaspoon salt

2 tablespoons butter

Water for boiling – about 1 gallon

Step 2: Cook

In a medium bowl combine the flour and salt. Make a well in the center and add the milk and egg yolks. Mix until smooth, adding more milk if needed to make a slightly loose dough.

Bring the water to a rolling boil. Add a pinch of salt. Press the dough through a potato ricer, or a colander, into the water. Boil for five minutes then drain well.

In a large skillet over medium heat melt the butter until it starts to brown. Add the spatzle and toss to coat. Cook for one minute.

Serve immediately with a sprinkle of black pepper..

Step 3: Serve It.

Serve it up with some traditional Bavarian cuisine like rotkohl, and schweinsaxe!
